I prefer applewood for smoking any of the bacon or pork and just love sugar maple for turkey. any of the beef or even turkey again I like hickory too. I have had pecan before and pecan hulls and it is nice but not too local for me so I stick with the old apple tree out back and trim it down here and there for my chips when it needs it.
I've been smoking bacon tonight - and OMG!!!! My whole house smells delicious. I just had to try a little bit so I trimmed off a little corner and sliced it up. I popped it in the microwave for a minute and then I swear I died and went to heaven! This is soooooooo good! I wish I could turn a whole pig into bacon.
