The Wife and I(mostly it was HER idea!) decided to can some salsa today. When it came time to do the onions, she cheated by taking the EASY part. She cut both ends off and pealed the outer skins, under the running water, and left ME to do the chopping in the food processor.
I was tearing up like a high school girl that had be dumped by her date at the prom!

It's a good thing I like her a little bit...........

what recipe did you use? what source? mine turned out pretty good - i used the ball cookbook one for 'zesty' salsa.

That is the same recipe we are using!!! The stuff ROCKS!!

WE thought we were only going to have 28 pints.........but it appears as though we miss-judged a tad.....looks like we will end up with at least 35 or more....

ok here is my issue... all they talk about is how important it is to have the right proportions.. but i ended up with SO MUCH MORE than they said!!!?!?

so are we all gonna die?!?!?!?!?

and

they dont say how big, for instance, to cut up the peppers.. so if you cut them in a large dice then you'll use less in a cup than if you cut them very small!

the whole thing made me very nervous. sheesh

but it turned out really tasty!

oh - and the weather guy says the space station is gonna fly over at 8:10 tonite! run right out there and see it!

on that same note....Pepper and her Pod People have rearranged themselves in an attempt to contact the mother ship...

OFG.....we used the food processor with the slicer blade on it and ran everything thru it twice. 'Mators, onions and peppers.
Not to big........not to small.....just right!
