And no, nitrates/nitrites are NOT necessary in these modern days of refrigeration. We don't put those chemicals in our pork chops or our steaks, and neither do they belong in our ham and our bacon. Just treat the untreated meat like untreated meat and use it up or put it in the freezer.

Many things that occur naturally in our foods are NOT the same as the lab-produced version. Vitamin D2 is a classic example. It was added to milk for years since cows no longer get outside to produce REAL vitamin D. Lo and behold, it was recently discovered to be rather toxic and removed from the milk supply. Now they add D3. I wonder how many years it will be until that is considered toxic.

Another classic example is hydrogenated fat. Vegetable shortening....from veggies, so it must be good for you, right? How many decades has it dominated our food supply and now is finally known as a major poison? Yet look at labels, it is still everywhere, even in products labelled "trans-fat free".

I prefer not to add toxins to my food....I get enough when I occasionally eat out or buy something like commercial hotdogs or pepperoni. I am sure this recipe will be great without the chemical additives. I'm sure dear Aunt Ellen didn't know better, as many of us didn't for many years.

Again, everything in moderation. A batch of salami every now and then made with the Tenderquick is not gonna kill me....

Of course, for all your purists, I understand your argument as it applies to how you eat. But there are a few (and I bet many) of us here that don't have a problem with the occasional Big Mac :D or salami made with a preservative containing nitrites.

Framing Fowl, thanks for posting the recipe. It's sounds like something fun to try.
