Avoiding adding gluten to WW bread?

A couple of points...the tummy aches are on going but hard to pin point. We thought we had it down to peanut butter, but the she got an belly ache when she had eaten no PB for days......we have mostly eliminated dairy this past week....the only thing that is in her diet daily is wheat. So, we are trying to ease up. She seems to handle some, just not 3 times a day....she does not like sourdough :/ so I am exploring some other options.


As for flour.....I have bought WW pastry flour in bulk for pizza crust (gave her a tummy ache), another packaged brand for bread flour for bread and I bought some wheat berries, I think soft winter wheat? But frankly I have not taken the time to figure out what to do with them...I think I soak them (add whey) for 24 hours, then dehydrate, then grind. Yes?

Also I am not necessarily looking for slicing sandwich bread, a rustic loaf that I can serve warm with diner, or they can just pull hunks off of and slap a little pbutter on as a snack, or slice off a piece to toast is fine.

It doesn't have to be this no knead, I just find it very handy to have dough in the fridge.....I was going to try a conventional recipe and just throw it in a container in the frig....maybe it is time.

Will she eat fermented veggies? You might try a spoonful before each meal and snack for a while. Consider it medicine, so you can get her to take it even if she doesn't love it. This comes under the category of "Can't hurt, might help!"

Yes, you can do the wheat berries that way, but the ones you got are low gluten and will make good pastry flour, not bread flour. Look for hard red wheat, the easiest type to find for bread.

Go for the no-knead. After a day, it is considered "soaked." I use the recipe in the MEN article that is for white flour and just sub ww. Easy-peasy!

The only fermented veg I have is the ginger carrots...starting hot peppers today but I can't even choke down the carrots, so I hide them in salad.

What about kombucha? I can get her to drink a couple oz will that help?

I am really not clear on the different beasties and what they are good for...kefir, kombucha and fermented veggies....all a little confusing. Are some good for correcting certain issues and other for other issues or do they all promote a good gut?

Today I absolutely put my foot down....NO WHEAT! Last night she cried at bedtime because her tummy hurt... although she did fall asleep quickly so I am not sure if she was just frustrated because she had to go to bed but I am sure her tunny did in fact hurt....horrible food day: Chicken nuggets, fries & soda with a friend and then Daddy gave in and bought frozen corn dogs, which I told her was a bad idea. I have got to get her to understand that she has control!

You know, if you can get her to eliminate (dh, too!!!! Sheesh! :smack ) anything that has HFCS and hydrogenated fats (those "no trans fats" labels are deceptive!!! Watch out!) that will eliminate a LOT of offending foods.

How old is she? Can she listen in with you on the class? DH, too?

As for the ferments, they do have different beasties, but there is also some overlap. Different bacteria is prominant at different stages, as the increasingly sour flavor indicates. See what she likes and try some different things. Get some veggies fermenting in different forms and make some extra to age for a long time...they really do change. Does she like dill pickles? Yowza, mine from last summer are amazing now! And the sour comes from good beasties, not distilled dead white vinegar like commercial pickles.

Can you get her involved in the experiment? Look at recipes, take her shopping, choose the items together, and make it together. Taste it at various stage. As long as there is no gag reflex, it is doable! Remember, you are making medicine in her case, so as long as she can swallow it, the taste will do. Beet kvass is so easy...does she like beets? Not me, so I can't handle it, but I will take a couple ounces from what I make for the goats now and then, with a chaser!

I would have to agree with this one.....I grind my own red turkey wheat and the bread is so springy and lovely that it practically makes itself! I don't even let it rise a second time before placing in the oven, just pop it right in.

WW bread is slightly more dense than white bread anyway but I've never had to add any gluten to mine, fresh ground or store bought. Of course, I've never tried any other recipe than one so this could be another factor for my breads. :hu
I buy store bought WW flour to make my bread,...and I never have added no gluten to it.

4 c. warm water
3 T. yeast
1 c. honey or brown sugar
2 c. white flour (optional~may make this all WW but it turns out lighter if you add a little white)

Let yeast work.

Add:

1/3 c. (or more) ground flax seed (optional but it sure makes it moist and flavorful)
1 T. salt
1/2 c. oil
Add whole wheat flour, one cup at a time, until you reach your desired consistency. Adding some white flour will make for a lighter bread, if so desired.

Knead bread until springy and won't stick to your hands, form into a ball, coat with oil and cover. Let raise...can let raise a second time after placing in loaf pans but not necessary. Bake at 350 for approx. 30 min(or until lightly golden on top/bottom).


Now, this is Mama's recipe but everyone puts their own little spin on it. I like my bread a little soft, so I don't add so much flour and I don't cook into loaves but make mine into round, flat individual pieces on cookie sheets so my bake time is less. I also don't let my bread raise a second time, as it raises just find while baking.

Mom also only uses 1/2 c. of honey or sugar, but I like my whole cup. :D

Thanks for your recipe Bee :D

Free, she is only 7, so we have a learning curve here. The good news is that she does love to help in the kitchen and while she is not completely open to new foods, she doesn't dig her heels in either!

I am going to try to find some hard winter wheat and try a batch of properly prepared bread to see how that does with her tummy
