Mmmmm everytime i think of beets I think of Borsht! Yummy! And heavenly with a dollop of sour cream!

Those are gorgeous beets! Great job. 3 out of 4 people in our family love beets. Ds will only eat as many as he thinks will give him something cool to see the next day. I also pick a few greens here and there for salad or to use instead of lettuce on sandwiches.

Almost Self-Reliant
Beets are one of the staples in my house. DH and I LOVE them. Last year, I canned and pickled about 20 pints. Pickled beets are a favorite, dureing the summer...nice and cold...sweet..and a few hard boiled banty eggs in there. Ohhh yum! We dont eat the greens tho...I save them for the chickens! LOL
