I just want biscuits that are fluffy and light. Instead I get crumbly hockey pucks every time. Wh do they never turn out for me. I follow the recipe but it hates me. :hit

Get a new recipe! Not trying to be harsh, lol, but maybe, just maybe you should check out a different recipe.

Some recipes just don't work for certain places. Altitude issues, water too hard or soft, flour too coarse, electric or gas heat, type of baking pan used, they all make a difference.

Do you like sweeter ones, like you would have with jam, or not so sweet ones to go with soup, herb or cheesy ones? Roomie has a cheater recipe she likes that uses mayo, if you want I can ask her for it.

What are you using for your fat source in it? If you're using shortening, try lard instead.

I have tried all butter and also tried mixing shortening and butter as per the recipe. I haven't bought any lard. I read somewhere what kind not to get and know I don't remember.

Is your baking powder fresh? Could be an issue if you're not getting a nice rise out of the biscuits...

I hadn't thought of that. I will check the date on it.
