Breakfast ideas.

I need some healthy and cheap breakfast ideas. Right now we do pancakes 2x a week, oatmeal 2x a week, eggs 2x a week and cold cereal on Saturday. I need to cut oatmeal back to once a week. All three older ones are tired of it and refused to eat it this morning so they went to school without breakfast. I really hate to do that to their teachers twice a week!

You CAN do eggs more....just use different cooking methods. Omelettes one day, a fritata another day. Mini quiche in muffin tins another day...you can even make those ahead of time.

Fried rice with enhancements such as bacon or sausage, egg, mixed veggies, onion, etc.

Fruit salad with toast, English muffin, etc.

Corn fritters



I know 'zilla, lots of carbs here. ;)



"Cassrole" made from bacon or sausage, eggs, onion, bell pepper, potatoes, cheese.

I make large buttermilk biscuits, split them, insert a cooked large flat sausage patty, some ham or bacon, and cheese. Wrap in foil and freeze. In the morning, I take it out of the foil, nuke it for 45 seconds, add a fried or scrambled egg, and have home made McDonald's.

My dd loves toast with some cinnamon and sugar on it, also french toast is a big hit. I posted a granola recipe a few days ago,--you can switch the maple syrup for honey to make it a bit cheaper--it's a big hit here. Bread pudding is also a nice breakfast, and it uses all the heels of the bread loaves, it's basically a glorified french toast that you bake in the oven, and add apple or raisin. fruit smoothies with yogurt and frozen fruit are also good, but better in the summer.

Bagels with peanut butter or cream cheese

Scrambled eggs wrapped in a tortilla with some cheese

Waffles ....we make a big batch on the weekends so they can be popped into the toaster (store in the freezer)

English muffins, with melted cheddar on top

Think outside of breakfast. I'd rather see kids eat a loaded pizza over sugary donuts or muffins or cereal any day. How about leftover spaghetti with meat sauce, or a hearty soup? Grilled cheese sandwiches?

If you make sure they have some protein and if the carbs are complex (whole grains and veggies) then they will be able to think more clearly until lunch. Also good fats, such as whole milk dairy products (yogurt, milk, butter, cheese.) Kids need this for their brain function, even if they carry too much weight already.

Good ideas you guys!

I try to have hard boiled eggs on hand for a quick breakfast on the go.

DD usually has hard boiled eggs and a banana on the way to the bus stop. Sometimes a piece of sprouted ww toast with a smear of cream cheese or nut butter. I have also given her egg salad on sprouted toast too...she will at least get some onions and chives this way.

She is not a fan of veggies for breakfast, so I sometimes tell her in order to get breakfast she has to pay the chef by eating her carrots first.

I woke up early this morning so I made sauteed itallian sausage and eggplant*. I poured some pasta sauce on it and added some parmesian cheese...BIG hit!

*I had some salted and rinsed eggplant slices leftover from LAST week in the fridge...believe it or not, it was still good!

trust me, I'm no expert on food (huh, Free! :) ) but I do better on just a string cheese and some peanut butter rather than a bowl of cereal.
