We have a lady in our area who processes chicken June through August, when her kids are out of school. I'd love to learn how to process them during the rest of the year. She charges $2.50 per bird - would be a nice supplemental income!

We usually process our meat birds in November. We only do small batches of 6-12 at a time so if the weather is colder it isn't so much a factor. We just finished our garage so we can have a place to process out of the weather/wind. I can imagine doing chickens wouldn't be that big a deal....it's when you get into larger animals like cows and pigs that it is going to get tricky.

You could probably advertise on Craigslist. If you have a garage or space enough in the house to do the processing you could do it year round.

:D Good Luck! I have two piglets that are maybe 35 lbs each now...I don't have any desire to butcher large animals :sick , but sure admire those of you who can do it. Keep us posted!
