Camping recipes

We're going camping this weekend so I'm looking for your favorite campsite recipes. We will have our propane Colman stove and a fire ring. I'll bring my Dutch oven, but we won't be spending huge amounts of time hanging out at the campsite so all day cooking over the coals type recipes won't work for this trip, but share them anyway! I've done a lot of camping over the years but I used to follow my mom's example and cook a lot of canned food. Blech, not doing that anymore! We also will only have coolers with ice to store food that needs to be cold.

Our favorite camp recipe is Tamale Soup. It is made up of a pound of browned hambuger and four cans: Tamales, corn, chili with beans, and diced tomatoes. We serve it with Fritos. Not all that healthy, but we adore it.

We also make Hobo stew in the dutch oven. Line the bottom with bacon, again not healthy, press hamburger into bacon, add chopped onions, carrots, potatoes, celery, bell pepper, can of diced tomatoes. Season to taste. Takes about 45 minutes or so to cook over direct heat, covered. If you can get away without stirring, the bacon will be sorta crispy.

And then there are omlets in a ziploc. Boil some water. Break two eggs into each person's ziplock, add whatever you like, such as cheese, ham, seasonings, whatever. Drop the zliplock into the water and in about two minutes you have nicely rectangularly shaped omlet in the bottom of the bag. Cut the top of the bag off and slide it out onto the plate.

Can't think of any more right now, maybe more later.

Thanks! I'll collect whatever is posted then pick what will work for us. One pot meals seem to be the best when camping IMO.

So, I had a thought for one meal. I can make a crockpot meal like a stew or something tomorrow or Wednesday and freeze it. Thursday before we leave I can pack in the cooler and then when we arrive at the campgroud I can cook it.
One dinner down!
Breakfast is easy. Eggs, eggs, eggs.

The kids always like the "Walking Taco". One individual bad of fritos for each person. Use a packet of taco mix. Fix according to directions. When the meat taco is done, put a spoonful or two into the frito bag (with the fritos) and add cheese. Eat it right out of the bag. Sooo good!!

We always like cutting red potatoes, onions, peppers and sometimes new yellow squash up on a piece of tinfoil, put some real butter in and spices, fold it closed and put it on the grill. Takes no time at all for this to be done. You can add meat to this and its a full meal in one piece of tinfoil....easy clean up!

Don't forget to poke some fork holes in the top for steam escapage.

Yeah we used to do that on Royal Ranger campouts. Hamburger, potatoes, and whatever else you like on tinfoil. Fold into pouch, and make sure edges are sealed. We used to throw the pouches directly on the coals, cook for 20 min, flip then another 20. Oh yeah, holes for steam. Trust me, its really tasty.

If your catching fish, just gut and run a stick through them, and rotisserie style grill. Use a peeled willow twig, cause some trees leave a weird taste. Open up a large can of pork and beans, and set on grill(or in coals)til hot. Maybe wrap some ears of corn in foil, or use canned and do like the pork and beans.

We always wrapped our trout in tinfoil with a little butter and seasonings and threw them on the coals. When they come out you just peel the skin and the bones lift right out of the meat.

Thanks guys! DH is fighting saying he doesn't want to cook over the campsite's firepit. Truth is I hate cooking on the Coleman stove because it's small. And I do the cooking. I can light a fire. Sheesh!
Sorry, it's hot and I'm grumpy.... :p

Let the kids help cook over the fire....my kids LOVED that! They always marveled that we could cook a whole meal on a campfire and not have to do any dishes! :lol:

Hen, got a stream nearby? Let hubby and kids cook a meal and you go soak your tootsies! :hugs
