Canning Baked Beans

Making some store bought baked beans for dinner tonight. :hide I realized we eat them pretty often and I should be making my own. I found a recipe but it calls for corn syrup. :sick

Anyone have any tried and true Baked Bean recipes??? Especially good for canning.

Try a small batch and substitute honey for the corn syrup, I bet that would be wonderful! I have a canning cookbook around here somewhere that has a baked bean recipe in it, I'll see if I can find it.

I canned some last winter and they came out good. I used a standard recipe, eliminated the sugar, added some blackstrap molasses, etc. I didn't cook them for hours before canning, I just brought the mixture to a quick simmer just to get it hot to put it in the jars. I put a couple of pieces of salt pork in each jar first, since that is how the folks wanted it, and processed it for the time for the pork. Oh, I soaked the beans for 24 hours with a bit of whey...or was it yogurt, or kefir? and rinsed them, then proceeded with the recipe.

They came out quite soft. I imagine if you cooked them for hours first then canned them, they would be paste by the time they were done?

I was just thinking I might do another batch this week, they were a hit as a quick meal and so much better than the commercial version (as all homemade foods are!) Cheaper, too!

Yes I think the honey sound good, or maybe just upping the molasses.

Free, I was thinking the same thing about the beans. When I normally can beans I don't cook them either. After soaking I bring to a boil and add to the jars. I am still sometimes getting beans that are too soft I couldn't imagine baking for 4 hours first.

Well, not much else to do today. Geesh, I should soaked my beans last night. :barnie

Well maybe I'll do it after Christmas.
