I did it years ago. I don't remember the specifics. I was learning to can and just bought a stupid pineapple at the grocery store, chopped it up, and canned it. Kind of stupid, really, but at least I got experience! It cans very well, kind of like canning peaches. I canned it in pineapple juice, and I remember the color and taste faded pretty quickly without the added sugar as a preservative.
