Hmm, thats interesting to know. Well, im getting out my cast iron skillets...and useing them then...Now...where is my metal spatula!?? :p

I consider myself a "well seasoned" user of cast iron. I agree 100% with your article.

As you stated the spatula is critical. My personal favorites are Pampered Chief, the have a small and a medium very stiff metal spatula. The small one is just perfect for a nice little #3 Griswold slant logo perfectly seasoned and only use for eggs.

I noted you saying some Collectors paying $500 for certain pans. Yes even much more. #20's often go for $700 and the rare spider logo Griswold in good condition will go for $2000!!
So if any of you go to auctions, yard sales and so forth.. Know your iron!

Just for fun I thought I would share the iron above our stove and in the cabinet. (Pieces we use regular)

I have to admit, when you said the manufacturer said it isn't a good idea, my heart sank. I threw out all of my prized non stick cookware...and seasoned up all of my cast iron last Sept. I am sooo happy I don't have to switch to all stainless pans. I didn't want to break my stove either by taking a chance. I can't afford either option. :p

Now where is that sourdough pancake in CI recipe?? :p

I think you mean a good gas one. Not like your electric glass top stove?

Another reason to always go with gas stoves, is in the event of a power failure you can still heat water and prepare meals....;)

I think it recommended to use a diffuser or somethiing when using cast iron on glass-top cooktops. Might be worth looking into.

Oh, no gas for me! We are too rural to use gas, unless we used propane,. and there is NO WAY I can afford that! LOL I will get an electric stove when this one dies...with the round burners. WHEN the electric goes out, and it does very often here, I cook on my woodstove. In the summer...I just cook on the grill.
