So who has great ideas for cauliflower? I made Pioneer Woman's recipe: http://thepioneerwoman.com/cooking/2009/01/cauliflower-soup/ and it is amazing, but I don't necessarily want to make 5 gallons of it.

These 3 heads weigh 12 lbs. I have about 8 more plants that haven't matured yet.

I was going to say dip in ranch and munch on, but it is alot for that.

frosted cauliflower

stream a whole head or cauliflower, drain well,
place in baking dish, frost with 1/2 c mayo mixed with 3 tbsp mustard, sprinkle with 3.4 c shredded cheese,bake @350 until cheese melts.

I know it sounds weird, but it is yummy

Wowza! You can blanch and freeze them after cutting them up. That is a lot of cauliflower to eat all at once!

Its nice with a cheese sauce over it.

And this is out of a Czech cookbook I was given years ago; we both really like these:

Cauliflower cakes

Cauliflower, 400 gm (a little less than a pound)
3 eggs, separated
1/3 cup flour
1/4 cup breadcrumbs
pinch of mace or nutmeg
Optional - ham, bacon, or leftover meat from a roast (50 gm, according to recipe; can't say how much that is in American Standard, so use best judgement), diced
Salt and pepper to taste

Cook cauliflower till soft, and mash with a fork. Add egg yolks, flour, and enough breadcrumbs so that it isn't too runny. Then stir in the mace/nutmeg, diced meat, salt and pepper. Beat egg whites till stiff peaks form, and fold into cauliflower mixture. Heat oil or lard in a heavy pan. Fry large spoonfuls of cauliflower mixture till browned on both sides.

Can it.. I can't believe you are harvesting cauliflower at this time of year. It's so cold here..brrr... I just bought 6 heads at Kroger yesterday to can for my Hubby and son. They love it pickled. Here's the recipe if you are interested in canning it.

Ingredients
2 Heads cauliflower florets
2 cups pearl onions ( I usually just cut up some onion if pearl onions aren't available)
1 cup pickling salt
1 cup sugar
3 cups white vinegar
2 tablespoons white mustard seeds
1 tablespoon celery seeds
1 small red chili pepper
Directions

Wash the cauliflowers and break them into flowerettes.

Scald, cool, and peel the onions.

Mix the vegetables with the salt, add just enough water to cover, and let stand about 18 hours.

Drain, rinse in cold water, and drain again.

Dissolve the sugar in the vinegar, add the seeds and hot pepper and bring to a boil.

Simmer the vinegar solution for 10 minutes

Pack the vegetables into hot jars, fill the jars with the boiling-hot vinegar liquid and seal.

Process in hot water bath for 10 minutes.

Note: Do not overcook or the veggies will be mushy.

A friend of mine from Israel taught me a great dish for cauliflower. I have been making it for 40 years! Wow, just realized that.

Cube some lamb, season with salt and pepper and brown it in olive oil, set aside. Make some brown rice, about 1 cup per person, adding a bit of salt and ground allspice to the water or stock you use. When almost done, add the browned lamb to complete cooking.

Meanwhile, slice large flowerettes of cauliflower 1/2" thick and sautee in butter or ghee until dark golden brown. Salt immediately. Drain on absorbent paper.

When rice and lamb are done, gently combine with sauteed cauliflower. Serve with plain yogurt as a sauce, and sliced cucumbers. We sometimes put it all in pita bread.

I love cauliflower popcorn... it turns out sweet/salty, and it's a great snack. I usually added powdered garlic, cumin and chili powder to the salt so it has a little bit more favour.

1 head cauliflower or equal amount of pre-cut commercially prepped cauliflower
4 tablespoons olive oil
1 teaspoon salt, to taste

Directions
1Preheat oven to 425 degrees.
2Trim the head of cauliflower, discarding the core and thick stems; cut florets into pieces about the size of ping-pong balls (or smaller, but adjust roasting time)
3In a large bowl, combine the olive oil and salt, whisk, then add the cauliflower pieces and toss thoroughly.
4Line a baking sheet with parchment for easy cleanup (you can skip that, if you don't have any) then spread the cauliflower pieces on the sheet and roast for 1 hour, turning 3 or 4 times, until most of each piece has turned golden brown.
5(The browner the cauliflower pieces turn, the more caramelization occurs and the sweeter they'll taste).
6Serve immediately and enjoy!

hwillm1977 that is a great recipe! Sounds delicious!

Steam it, mash it up & add couple of spoonfulls cream cheese, 1T butter, salt, pepper and any other seasonings you like on mashed potatoes.

Faux-tatoes :)
