I also racked my 3 gallon of apple juice wine after 3 weeks on the spice bag. It smells like an apple pie, tastes a little like one also but not near as sweet, the alcohol is front and center. I'll back sweeten it to taste with apple juice when I bottle it. It finished off at 18.2% ABV. Yeast is good to 18% alcohol tolerance, so I fed it to death.

I have it cold crashing after stabilizing and adding benonite and topping off with apple juice. I'm hoping it will clear out enough to make a nice warmed up mulled wine for thanksgiving dinner.

I still think it would make a wonderful bandy but distilling without paying Dick Durban $7000.00 for a license in Illinois is totally illegal.

Next to be bottled is cranberry. I have about 6 gallons. Doesn't it look nice all degassed and cleared out in my 6 1/2 glass carboy?

I'm going to syphon a little over 5 gallons off the lees and into one of my 5 gallon glass carboys, so its topped off and won't oxygenate. I'll put the rest in a one gallon glass jug and into my refrigerator to cold crash and clear out. Third times a charm :)making cranberry wine has proven to be my most difficult yet. This wine taught me a lot.

I could really use a 6 gallon glass carboy, i guess I'll have to pick one up soon.

Wine to bottle this weekend

Approx 5 1/2 gallons of Cranberry & 3 gallons of spiced apple. Around 45 750ml bottles, little less than 4 cases :)

My 3 gallons of Spiced Dollar General Apple Juice Wine has finally dropped clear. It's 18.2% alcohol by volume o_O. I plan on warming some up in a pan for mulled wine. Looks like Thanksgiving is going to be happy one this year, this is some high octane wine!
