Cheesy Beer Chili
1 lb ground beef, or bison
16 oz (or so) of shredded cheddar cheese
1/2 chopped onion
2-3 brick-smashed garlic cloves (or you could use a knife and chop them )
2-3 bell peppers chopped (optional)
2 cups of cooked black beans (optional, if youre name is Xpc )
1 6 can tomato paste
1 28 oz can diced tomatoes
1/2 a bottle of beer (yea, that leaves you 11 1/2 bottles for you! )
2-3 T Chili pdr
Salt, pepper to taste
A few dashes of Cayenne pepper (optional, I like it spicy!)
Green onions or chives sliced up for garnish
Saute the veggies in olive oil, add chili powder, the beef/bison and cook until the meat is done.
Add to crock pot: the meat mixture, and the cans of black beans and tomatoes and tomato paste, mix well.
Stir in cheese
Drink 1/2 a beer and add the other 1/2 to the crock pot, stir well.
Set crock pot on high and in 2 hours the cheese will be extra melty and the chili will be perfect. (Check on it occasionally, it may need to be stirred.)
