Cheesy Beer Chili and on pg 2 Dace's yummy Margarita recipe! WOOT!!

Cheesy Beer Chili :drool

1 lb ground beef, or bison
16 oz (or so) of shredded cheddar cheese
1/2 chopped onion
2-3 brick-smashed garlic cloves (or you could use a knife and chop them ;) )
2-3 bell peppers chopped (optional)
2 cups of cooked black beans (optional, if youre name is Xpc ;) )
1 6 can tomato paste
1 28 oz can diced tomatoes
1/2 a bottle of beer (yea, that leaves you 11 1/2 bottles for you! ;) )
2-3 T Chili pdr
Salt, pepper to taste
A few dashes of Cayenne pepper (optional, I like it spicy!)
Green onions or chives sliced up for garnish

Saute the veggies in olive oil, add chili powder, the beef/bison and cook until the meat is done.
Add to crock pot: the meat mixture, and the cans of black beans and tomatoes and tomato paste, mix well.
Stir in cheese
Drink 1/2 a beer and add the other 1/2 to the crock pot, stir well.

Set crock pot on high and in 2 hours the cheese will be extra melty and the chili will be perfect. (Check on it occasionally, it may need to be stirred.)

Enjoy! The Russian wolf, oops, I mean my chow-hound-child LOVED it even with all those veggies hidden inside.

I just had chili for lunch too.....topped with cheddar, a squeeze of lime and a big spoonful of yogurt....yummy!

I hear ya.

I need a Tex-Mex fix!!!! :drool Hard to fill that void waaay up here, unless I do it myself.

Oh, gosh, I really miss a GOOD frozen margarita!! They make them too sweet up here.
