Cheesy Beer Chili and on pg 2 Dace's yummy Margarita recipe! WOOT!!

Dace's Fresh Margarita

This was in my sugar indulgent days, I haven't made them in quite a while, but they are awesome....especially the rimmer :drool

Ingredients:
Ice cubes
3 oz tequila
2 oz fresh
lime juice
1 1/2 oz simple syrup (recipe follows)
1 tsp Cointreau
2 Tbs lime-salt (recipe follows)

Directions:
Fill a cocktail shaker with ice. Add tequila, lime juice, Cointreau & simple syrup. Cover and shake until chilled, about 30 seconds. Place lime salt on small plate, rim glass with sliced lime then dip in lime salt mixture. Strain margarita into the glass.

Simple Syrup*:
1 cup sugar
1 cup water
Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves.

Lime-salt-sugar:
Zest of one lime
2 Tbs kosher salt
2 Tbs sugar
Blend together lime, salt and sugar in a small blender or mini food chopper.

All I need is that, in a big ice-cold glass, a basket of chips and a bowl of salsa and I'm the happiest girl in the world!!

Be sure to eat those chips with some fermented salsa, then you won't feel quite so bad and Miss Free won't be hunting you down to slap you with some soggy broccoli. :p

I need to make some! (And eat it with organic blue corn chips. :p)

I think chili and margarita sounds awesome, and after the day I've had I could call the booze medicinal.

wait did someone say tequila!?? whoot!

here's how i make a margarita:

1. open tequila bottle
2. open bottle of mike's hard lemonade
3. alternate drinking from each
4. fall over... but you can't have one until AFTER chores, of course. never try to milk a goat if you are drunk. i assure you this advice is sound.

BBH, I am making your Cheesy Beer Chili today and it smells FABULOUS! I had to make a half recipe since I didn't have a whole 16 oz of cheese & DH wants it cheesy, but I didn't skimp on the beer :thumbsup & I think I'll make some cornbread to go with.
Chili is great rainy day food and since it rained at my house for 2 whole minutes today (remember, I live in the desert), I used it for motivation.
