I will second that...again :D

Kale rocks.

I cook mine in a big pot of boiling water along with soba noodles. then drain and add a few tablespoons of tamari soy sauce, toasted sesame oil, and sesame seeds. Easy and delicious.
That sounds good. I haven't tried kale in sesame oil yet. I usually cook it in ghee.
That would be good too, but the sesame oil complements the sesame seeds, I think. I find this dish addictive. I never had kale before I made this and I have come to love it.

I never had kale before last summer. A friend had a garden so I bought a packet of seeds since they were on sale. We ended up being up to our eyeballs in kale! I was surprised at how tasty it was.

We raise a garden and sell at our local farmers' market. My husband loves greens and raises kale, turnip, mustard, collard, spinach, and several other kinds in the spring and again in the fall. He also cooks our greens - he'll be glad to know bacon grease is good for you.

Yet more proof that I am completely in the wrong corner of the web !!! My nick on several sites is Aunt Paula, named for Paula Deen. You know, the TV chef whose every recipe starts with "melt a stick of butter".

Oh, they are!

You know, I have been on every diet known to man, and some that I made up myself. I just got tired of the food police and decided to have fun with food by making it taste good !

Food can taste good without swimming in fat. I prefer my vegetables without all that butter, just lightly steamed. When you stay away from sugar, everything tastes too sweet. When you cut back on salt, everything tastes too salty. I think it's the same way with fat. When you stop eating greasy foods they lose their appeal after a while.

It is sooo true...stay away from chocolate long enough and you really do lose your craving for it...I gotta try it with sugar...salt is pretty easy for me...never been a salty person

I am going to go against what everyone else has recommended in the way of a cookbook. I know you said you wanted to cut down on your meat consumption, but man can not live on beans alone. :hide

If you want a nice cookbook that is chock full of "recipes, tall tales and outright lies from the legends of Barbecue" I highly recommend you pick up a copy of "Peace, Love and Barbecue" by Mike Mills and Amy Mills Tunnicliff

I have worn out my first copy already. :gig
