When I did the low carb diet, I remember reading about meringue cookies made with Splenda.

What about the no-bake cookies? The ones with oatmeal, cocoa, etc and you drop them on wax paper to 'cure'.....since the recipe is in IL and I am in GA, I'm having a hard time posting it! ;)

I don't know why I always seem to mess up no-bakes. I either have a mess you have to eat with a spoon or hard, crumbly rocks. I love to eat no-bakes that are perfectly soft and melt in your mouth, though.

I would do those...the big soft gingers. That way it is something unique but you are not going to invest endless hours in making beautiful cookies that someone may not appreciate!

My favorite cookie is Thumbprint Cookies,...roll them in pecans and use rasberry preserves for the center,.. :drool OMG! So good! (I only make them for Christmas,..I like them too well!)
Then of course peanut butter,oatmeal and the no bake cookies (we call them lazy man cookies) and I LOVE sugar cookies,...I have a great recipe for them that is easy. Roll the dough into balls and press them out with a glass with colored sugar. So EZ,...made 24 dozen last christmas!

You could do shortbread, brownies, or some other pan-type cookie -- easier than cutting/rolling/spooning dozens of individual cookies. Here's a favorite in my family:

Vanilla Chip Shortbread

1 cup (2 sticks) butter, softened (no margarine)
1/2 cup sugar
2-1/2 cups all-purpose flour
1 cup white chips (or use the red and green swirled ones for Christmas cookies)

Heat oven to 350F. Grease a 13x9x2-inch baking pan. Beat butter and sugar in large bowl until fluffy. Add flour; blend well. Stir in white chips; pat into prepared pan. Bake 30 minutes or until lightly brown. Cool 10 minutes; cut into bars. Cool completely.
