Crappie (the fish) recipes?

I live in "the city of six lakes" and SO loves to go fishing. We had fresh fish last night and more tonight.

SO caught 17 crappies and is cleaning them now for dinner. Any ideas besides breading and pan frying?

I enjoy them in a baking pan with some creole seasoning, butter, lemon, and onions sliced and laid over them. Bake them at 350 until cooked through.

In south Louisiana, where I was raised, we grew up calling them Sacalaite. French for "sack of milk", due to their white meat. Tasty little treats they are. :D

I fire up the grill...........lay the fillets in a pan, drip some melted butter and Mrs Dash Lemon/Pepper seasoning on them, then add a dash(or more) of beer. Cover with tin foil and cook till done.

The first pan is baking now. I lined a pan with foil and laid in the fillets evenly. I melted butter with basil, dill, salt, pepper and lemon juice and brushed the fillets with it. They were swimming in butter. :lol: yum!

I'm not sure what to do with the second batch. Probably will bake it, but with different spices.

Kim - that looks AWESOME! Thanks for sharing! We're having more fish tonight. :) I think that is THE recipe for tonight!

SO goes fishing almost everyday, at least every weekend, so there will be a lot of fish. If I learn how to fillet them well. I suck at it and SO gets tired of cleaning fish.

When I lived in Wisconsin, we buried the crappie in the garden! :gig Too much trout, perch, pike and walleye available to bother with crappie.

Crappie are my favorite fish, hands down. You can keep your bass, catfish & trout :p
You've gotten great suggestions so far, my favorite is baked in a pan with onions, butter (lots), lemon juice, garlic, salt & pepper. Or marinated in the same & grilled :drool
