Crappie (the fish) recipes?

We eat a LOT of fish (hey, it's free from every pond around us) so I gotta figure out how to cook it differently than frying every time.

One thing I did the other day was take a box of Zatarain's jambalaya mix, add some sauteed onions, green peppers and tomatoes, toss in some chopped up little bits of smoked sausage, and cooked it about halfway. Then I tossed in about a pound and a half of fish (it was catfish) and cooked it the rest of the way. Any type of fish is okay. It was delicious.

Another thing I do is cook up a tomato sauce with peppers, onion, garlic, maybe some zucchini or whatever, make it as spicy as I feel like, then lay some fillets in it at the end of cooking. Serve it with rice. Again, any type of fish will do, bluegill, bass, crappie etc.

SO used to throw back all his fish. He says this recipe makes it worth cleaning them! :)

We had a friend over for dinner yesterday. Her family is very into fishing also. She said it was the best fish she has ever had.

I have these favorite fish recipes posted as well. (Although they're not fried.) Like the first one, they call for other varieties of fish, but they will work fine with crappie or other fresh water fish
