Cutlery sets?

Both carry a large assortment of exotic woods. Some of which are very hard, if you were to make a cutting board, what woods would you concider?

Maple is the traditional choice for cutting boards. I see no particular reason to stray from it.

You don't *want* a super hard cuttingboard, for the same reason that glass cuttingboards suck -- they are too hard on knives.

Most of my family has a set and we have been very pleased with them. My set was a Christmas gift from my Husband 12 years ago. I have had them sharpened twice. They are pricy but will last a lifetime.
