We canned some last year and it turned out great. Cubed it and put onions and garlic and a beef bullion cube in it. In some of the jars we added a fajita seasoning. :p

For meats, I'm pretty it is a MUST to pressure can it because it kills the botulism bacteria.
According to the FDA, it must. However, we all know that the FDA isn't "know-all". We were raised on waterbath canned venison and don't plan to change that.

Treat deer like beef. Just substitute it in your favorite recipes.

It may have a little sharper taste, depending on where it was grazing and how it was handled.

I am no longer reluctant to cook and eat a venison neck roast. 24 hours in the crock pot after an overnight soak in milk (might try buttermilk next time). Garlic, pepper, and a bit of salt with a quartered onion and some bacon slices on top.

It fell apart, some gamey taste but not enough to stop me from eating it, just enough so you know you aren't eating corn fed beef. Now it is on the wood burner with some seasonings so we can have tacos made out of it tonight.

Ok.. Forgive me for asking, but what is it about the taste of wild game that so many don't like? All of our red meat growing up was either deer or elk, so I guess I'm just used to it. It just tastes.. Real I guess, not sure how to explain it, but very real.

I wish I could have a side by side of our meat today versus the venison of my youth. To me, our current meat is awesome, that of my youth much stronger tasting in a bad way. So, did I just get really acclimated, are we better cooks of today's meat, or is the deer diet different, thus the taste?

I don't mind it, but The Wife doesn't care for it at all. Actually, it's the smell of it cooking that she has a problem with.

And, if you knew The Wife you wouldn't question it!

I think people THINK it will taste "off". If they don't know they are eating deer meat they would never know it.

I made barbeque for my 7th grade home ec class and didn't tell them it was deer meat until it was all over (didn't tell them it was roadkill though :lol:) and still had 2 girls run to the bathroom to throw up "Bambi" even though they had previously said how good it was. :rolleyes: Pansies.

I have fed plenty of people deer and they never knew it. Soon as I told them what it was, then they had issues. Purely psychological.

I think people are so used to the bland commercially processed meat that anything with real flavor or texture is off putting to them. To quote my father "Big 'ol SCHTUPIES" :gig

I just think people are so disconnected with where their food comes from that they just can't imagine someone physically going into the woods and killing something and then cutting it up and cooking it. I mean really....if they could see the inside of a Tyson facility it would make their heads spin and pop off.

My husband serviced a payphone years ago in a Tyson processing plant and immediately came home and proceded to throw out anything with a Tyson label on it. :sick Yep, it was that gross.

I am making sure my kids know where there food comes from, how to kill it, cut it up, and prepare it. My goal is to never buy store bought meat again. I still buy pork and turkeys but I'm working on hubby......all in due time.......MUHAHAHAHHHAAHHAHAHAHAAA
