dinner suggestions (quick!) for 2 lbs ground beef in crockpot?

Postgame wrapup: I had been leaning towards meatballs cooked in tomato sauce (to put on pasta) until the shepherds pie suggestion came up, which sounded better so I did that.

I made it just a bit sloppy but mixed some flour into the ground beef when browning it, and it came out about right texture-wise in the end. I put the potatoes on right from the beginning and it worked out *fine*. Next time I will adjust seasonings a bit differently but overall, as "emergency leftover meals" go, it was perfectly fine and enabled me to get work done outdoors :)

I like some of the other ideas that have come up since I committed to shepherds pie, though, and will have to keep them on mental file for next time!

Pat, you mentioned leftover mashed potatoes. I mix an egg and a little flour, some chopped onions and make potato patties. I fry them in hot oil and they are sooooooo good, that I always make "extra" mashed potatoes. But, this is the south, where we eat anything fried.....

I don't think this is geographical :D. My mother did this, and now so do I, and she grew up in Michigan, and I, in California. One of the better ways to use up leftover mashed potatoes :). But I think the OP was actually about ground beef, and there I can't help. Quite honestly, ground beef is such a quick thing that I've never thought about combining it with a crock pot. (But then, I don't have small children, and I do have, quite often, plenty of time ;))

Nope, not geographical, I think pretty much everyone with potatoes makes that kind of thing. My mother is Pennsylvania Dutch and I grew up on potato cakes like that, although they usually had some parsley or sauerkraut mixed in. Mmmm :)

The reason I wanted a slow-cooker recipe for the ground beef was that I had time in early afternoon to do a bit of cooking, but no time at all for the couple hours preceding dinnertime. I suppose I could have made something, cooled it, then re-warmed it for dinner, but <shrug>

Pat, currently with some turkey parts in the crockpot :p

And I just make extra mashed potatoes cuz I like to eat mashed potatoes, even for breakfast. Don't know how many times I've had nothing for breakfast but some mashed potatoes w/giblet gravy and a bit of turkey or chicken mixed in.
