Do you have a bread machine? My pizza dough comes out great with mine. I end up with two doughs- one I freeze and the other I cook that night. Of course, you still have to turn on the oven...
For hot summer "I am just NOT going to cook" evenings, I like a big bowl of coleslaw (can have multiple veggies in it, not just cabbage/carrots) plus a couple large handfuls of nuts. I do not know whether that'd be to everyone's tastes though
Or something out of the freezer that I've cooked ahead of time. I like *really* spicy curry type things for hot weather. Freeze in suitable size portions.
If you have meatloaf in the freezer, cold sliced meatloaf sandwiches are always good, with pickles.
Or tuna salad or canned-salmon salad with mayonnaise-type dressing and whatever chopped-small vegetables you have a bunch of at the moment.
Or a sandwich (or wrap) with tomato, lettuce, onion and mayo.
Or break an egg into a soup or salad size bowl, scramble lightly with fork, microwave briefly (60-62 seconds in my bowl in my microwave, depending on egg size) then put in a small tortilla with salsa and lettuce to make an egg wrap.
For me it is a matter of not having an appetite, being busy with evening chores and a family that wants burgers or steak every night and thinks corn is a vegetable. Getting them to try new stuff is not easy and I get tired of getting faces made at me.
I grew up on different food and that is usually what I make. SO makes the burgers and steak on the rare occasion we have steak.
We often end up with sandwhiches for dinner or have "scrounge" night. One of us may make something, but we mostly scrounge for whatever seems good and basically snack on what we have. THis could be leftovers, deserts, cake, yogurt, hardboiled eggs, pickles etc.
When we have several nights in a row, where we don't have good quality meals, one of us ends up breaking down and making a good and healthy meal.
DD is GF and I am trying to be low carb. Dh couldn't give a hoot what I feed him as long as it's on a plate and ready when HE is. Ds and 5yo DD love all types of foods. Thank goodness.
I do freezer shopping at the beginning of each week. Uhhh??
fish, chicken, Italian sausage, ground beef etc... Then I move towards styles. Chinese, Mexican, American... And hopefully combine them into some tasty creations.
There are always a few stand buys for when I can't think of anything. Like tonight is Spaghetti with ground beef, dehydrated mushrooms, fresh onions, zucchini, bell peppers. GF pasta for family. I am also cooking a spaghetti squash from last years garden for me. I still have about 6 left.
I should probably throw together a salad as well.
Thanks goodness for the veggie garden, all summer it's my go to guy!! whatever is ripe and ready that's what we we eat.

Umm...baked potato? I usually get sick of the same old about once a month and do the "every man for himself" meal. We wind up eating something good for us, but not the best. so what? Everybody needs a binge for junk meal on occassion. It won't kill ya Have a bowl of ice cream and some brownies
