My favorite farm stand is opening tomorrow and the sign says....sweet corn! I told dh as we drove by....sweet corn means zucchini/corn fritters!!! And I have all that nice lard I rendered last winter. I think I will add some chopped dried tomatoes that I have left from last year. They will add some nice color that will look awesome with the green and yellow.
Here is an even easier (though not quite as good) version, for when you are just totally fried and cannot stand the thought of doing any more dishes than necessary:
Open a can of corn (either storeboughten or home-canned). Drain out all the liquid as best you can. Now crack one or more eggs into the can of drained corn -- how many depends on the size of the can, but basically you are trying to get enough in there to make a batter, so the egg should bring the liquid level back nearly up to what it originally was. Stir real carefully but thoroughly. Now add a little bit of flour and baking powder and salt to the can, again stirring carefully (so it doesn't spill out) but thoroughly. Then fry it up. Only the frying pan needs to be washed (and the jar if it was home-canned corn)

Made a big batch of batter last night and YUMMMMM! Fried them in lard. Chicken fat is better, but I am out of good quality chicken fat. We've been grilling....
