Egg Custard Pies & Quiche Recipes

This started out as an "I DID IT" for Egg custard pies. And as usual the recipes grew to include Quiche. So I changed the name.

I actually made my very first edible pies yesterday.

Every pie I ever tried to make ended up in the garbage can. For someone who bakes their own bread, bisquits, cakes and cobblers this has always been my weak spot and a very frustrating one.

But I have all these eggs (almost 2 doz a day) that I can't seem to sell more than a couple of doz a week.

These pies were gone before I could get around to taking any pics but they turned out perfect. I will admit I did not brave making my own pie crust for this effort.

Recipe found on All Recipes: Grandma's Egg Custard Pie

1 - 9" pie crust
3 - eggs, beaten
3/4 cup white sugar
1/4 teaspoon salt
1 - teaspoon vanill extract
1 egg white
2 1/2 cup scalded milk
1/4 teaspoon ground nutmeg

Preheat oven to 400
Mix eggs, sugar, salt and vanilla. Stir well. Blend in scalded milk.
Brush pie crust with egg white
Bake for 30 to 35 min or until a knife inserted in center comes out clean.

(Makes 1 pie)

I made a couple of modifications to the above recipe. I used a half can of sweetened condensed milk and then added enough milk to make my 2 1/2 cups. I made sure they were mixed well before I started heating the milk. I did not bring the milk to a complete scald. I just heated it up.

I did not double the recipe for 2 pies - being on my first attempt in so long I was afraid to. I just mixed up two seperate batches. Next time I will double the recipe I think.

I think thats the same recipe I used from there but I put peach halves in the bottom and put the custard on the top :drool :th

Oh, I bet peach halves on the bottom are good. Will have to try that.

I have never tried egg custard pie. The recipe looks easy enough; and am I always looking for a new recipe that uses eggs. I might just give this a try. I'll let you know how mine turns out. ;)

How about quiche? You could make a few with all those eggs and pop them into the freezer. Just a thought :)

I have considered quiche but......that is something I have never tried and even though I will stare down an angry dog and dare him to approach me. Quiche scares me. LOL Its worse than the pie thing was. Got any good recipes (easy) that I might start with?

Sounds wonderful! And we always have lots of milk and eggs around. I think I will try this very soon without a crust--easier and less rich :) Thanks!

Ahhh, I found it all by myself. Looks good 2dream. But only 3 eggs???

Dace, quiche is sooooooooooo easy. Use whatever's in the fridge. Leftover ham, gr onions etc... It's the cheese that makes it yummy.

I make quiche quite often. Then we eat the leftovers for a couple of days. It is very easy to make. The recipe that I use is for spinach quiche, which calls for four eggs. I have never tried freezing it, but that would be a good idea.
