Spinach Quiche

1/2 cup mayonnaise
1/2 cup milk
4 eggs, lightly beaten
8 ounces shredded cheddar cheese
1 (10 ounce) package frozen chopped spinach, thawed and liquid squeezed out
1/4 cup chopped onion
1 (9 inch) unbaked pie shell

Direction: Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with foil. In a large bowl whisk together mayonnaise and milk until smooth. Whisk in eggs. Layer spinach, cheese, and onion in pie shell, making several layers of each. Pour in egg mixture. Place quiche on prepared cookie sheet. Cover with foil. Bake in preheated oven for 45 minutes. Remove cover, and bake 10 to 15 minutes, or until top is golden brown and filing is set.

Here are my modifications to the recipe: I also add mushrooms and saut the onion and mushrooms before getting started. I always use a deep dish pie crust. When layering the ingredients in the pie shell, I never seem to have enough room for the full 8 ounces of cheese. When pouring the egg mixture into the pie shell, I use a spoon to carefully move stuff around a bit in the shell, otherwise the egg mixture has a tendency to pour out over the sides.

I have considered quiche but......that is something I have never tried and even though I will stare down an angry dog and dare him to approach me. Quiche scares me. LOL Its worse than the pie thing was. Got any good recipes (easy) that I might start with?
Easy peasy!

Here is the basic idea, get a pie crust and put in, sliced green onions, crumbled bacon a cup or so of shredded cheese, then top with eggs mixed with some cream. Bake till knife comes out clean. Couldn't be easier and you can fill with whatever you like( have on hand), meat, cheese and some sort of herb/veg is the usual trio. Below is the basic recipe that I use.

You can make a few of these ahead and keep them in the fridge...they can be eaten warm or cold for breakfast, lunch or dinner...they are perfect!

I made my first custard pie today, but the one I tried this time was a coconut custard pie. It has a really good flavor and turned out better than I expected. I thought about trying this recipe as well for coconut custard pie. Apparently, the pie forms its own crust; and the recipe looks really simple.

Maybe one day, I will learn how to make my own pie crusts. Now that would be a milestone for me, but finding pie recipes that don't even need a pie crust is even better. :gig

Hiedi making my own crust would be a milestone for me too. Especially if I was able to eat it after I made it. LOL

I may have to try that makes its own crust pie myself.

And congrats on your pie.

Here is a recipe that comes directly from my Moms cookbook, she kept a private cookbook of recipes that she made. My sister has most of it, but Bobby gave me about a quarter of it, the back pages. I made this last night, and WOW was it good.

Lumberjacks Quiche

8 slices bacon
1/2 cup onion
1/2 cup parmesan cheee
1 1/2 cup chedder
1/2 shrooms
4 eggs beaten lightly
1/2 milk
1/2 cream
one pie dish
salt/pepper

Pre-heat to 400
fry bacon and onions when nearly done add half parmesan cheese and shrooms.
When finished cooking mix bacon, onions, shrooms with all remaining cheese, when done place in a cold/frozen pie crust

Mix eggs, slightly beaten, milk/cream together pour into pie crust, oil edges and cover with foil

bake 15 minutes at 400, remove foil reduce temp to 375 for 35-40 minutes oruntil top of quiche is lightly brown.

*** I added 1/2 teaspoon of garlic powder***

I gotta get those chickens laying eggs so I can fix 8 of these at once to freeze for future meals....

Wow that looks great. Since we have so many recipes here for quiche I changed the name of this from "I DID IT" to egg custard and quiche recipes.

I made a couple more egg custard pies a few days ago and added a little coconut to one of them. I just sprinkled it on the top about half way thru cooking so it came out toasted. It was good if you like coconut.

I can't wait to try the quiche recipe.
