Hi snapshot!
We couldn't find fresh cayenne so I used the ground cayenne. Since you only use 1 teaspoon of cayenne per quart, the 1.75 oz. jar will make a lot of batches.
We couldn't find the horseradish root locally, so I held off putting my tonic together for a few days as we had to make a trip to Batesville (it's about 40 minutes away so we don't go there unless we need to go to Home Depot) and found it at the WallyWorld Super Center. I grabbed the largest root that they had so I could make a couple batches.
The only horseradish I could find locally was the sauce (horseradish and mayo(?)). If I could have found it grated in vinegar I would have tried using it.
If you can get ground horseradish, I'd definately give it a try. I am huge on experimenting.

I gave mine a shake whenever I remembered to. Sometimes it was daily, sometimes it sat for a few days before I remembered to give it a shake (out of sight-out of mind).
It's pretty potent after the 8 week steep but I can still sip it straight and I am a huge wimp on spicy stuff! You can dilute it with tomato juice or water to make it easier to get down, too.
