Read up on how Victorian bakers would add plaster to the flour to make it whiter. White bread was seen as high class.

Real white bread at that time was fine ground and super sifted to remove all bran. So more expensive.

White flour has the bran removed. Whole wheat is just that, the whole wheat berry, nothing taken away. So the loaves are going to be more dense and heavy. Chewier and lots more flavor, not to mention much better for you. Most whole wheat bread is only half whole wheat, the other half is white flour, because of the density.

Yes they did. There was a reason that the book "the Jungle" created such an uproar to the point that food safety laws were created as well as the Food and Drug Administration.

Food producers can't be trusted to do what's right without oversite

i think many businesses start out with the good intentions but then as the generations pass and time goes on and the company gets passed to other people who may be less interested in quality and more interested in profits... even in non-profit organisations it is rare that the higher ups don't get paid a lot and take advantages of perks, etc.

i consider it normal human behavior. trust but verify.

and then things happen. like i'm seeing our cheese blocks start molding too soon recently and i think it is an issue at the packaging plant that is damaging a corner of the package. the mold is starting at the other end of the cheese away from the end we open.

i'm going to try to get pictures of the next block of cheese and see if i can document the damage if it is there.

FB told me all about this... and the reason why they "enrich" storebought flour. She ground berries a little finer yesterday and got bigger loafs. She brought me a piece with butter and said well what you think? I said delicious, your almost there for sandwich bread. Maybe grind the berries a little finer. She said that what I think also.

Those look good enough to eat—and not share!!!! LOL
She said she was going to give to her chickens. I looked at her funny and said, hush your mouth, I'll eat that bread. Then she said you know it has no preservatives. I said and if it get moldy then you can give to the chickens but until then there is absolutely nothing wrong with this bread. And to prove my point I just had a piece smeared with butter and there's still nothing wrong with that bread.
