Free...veggie question for ya

Yep, you are bored silly. I get that way, too. Have one low-veggie day, then get creative. My favorite slump-busters are roasted root veggies, tossed with herbed chicken fat (or bacon fat!) and then covered in shredded sharp cheddar when it comes out of the oven. For a hot day when you don't want the oven on for an hour, you might try veggies and dip. Be sure to throw in veggies you don't usually have but like, such as snow peas or sugar snap peas, slice jicama, cherry tomatoes, thinly sliced rutabaga, along with the usual standby veggies like cukes, carrots, celery, etc.

My favorite dips are sour cream and onion or parmesan peppercorn. Any salad dressing will do as well.

Dace mentioning an off tasting cucumber reminded me of a story.......

The neighbor lady to our North is a sweetheart and likes to cook something and bring it over, or give us stuff from her ever shrinking garden. She is after all, 79 years old, but they used to plant one heck of a garden! She is also a cat lover. She has had an inside cat ever since I moved here, over 25 years ago.
Back to the odd tasting cucumber..........One day a few years back, she brought The Wife and I a few cuke's from her garden. I pealed and sliced one of them up to eat raw with our dinner that evening. MAN did it ever taste BAD! I mean it was TERRIBLE! We both love fresh cuke's but we just could not eat this one. :sick It even smelled funny............

A couple of days later I happen to look over towards the neighbors place, and I see her carrying the litter box out towards the garden.....I am thinking to myself "Oh HELL no!" You guessed it, she started dumping it right in the middle of her garden.

The Wife and I now just graciously accept whatever she brings us, and after she leaves, toss it on the compost pile.

So I went to Whole Foods last night and they had some good looking cabbages so I'm going to go Asian style this week with an Asian cabbage salad and some lettuce wraps. That will help for a few days. I was looking for asparagus, but the tops were already opened. Mine will be up in a couple weeks. I saw some bunching onions peeking out of the garden bed this week and I'm seeding lettuce and spinach this week.

Now I'm drooling down the front of my shirt! Those sound so good! I am going to run out to the garden to see if mine are still doing anything yet! :fl

Sometimes I get the veggie blahs as well. Usually a trip to an Indian restaraunt or a new cookbook helps.
Sounds like you could use a break in the kitchen for a few days!

Dunno whether it's fortunately or unfortunatley, but I rarely ever get a day off in the kitchen. We are having dinner guests tonight, (and besides that, I'm always in the kitchen, and I like it in there) I'm trying to mix it up a bit. Slow roasted quail, tomato and cucumber salad with basil, roasted fennel, mashed sweet potatoes, herb biscuits, and apple crisp. I might do either another cooked veggie too or a caesar salad. I'm thinking along the lines of variety being the spice of life. Hmmm. No bacon, I may have to incorporate that into the meal somehow. Bacon does make everything better doesn't it?
