I finally called the town hall to find out what the hold-up is with the inspection of my propane tank....I really need to do a little canning, and we are running low on catfood. I lost the "good" burner on my electric stove and the other large burner is in the rear of the stove and I ALWAYS burn myself when I use the canner on that burner, as I have to make so many adjustments to the heat on that cranky burner that it is inevitable that I touch the hot canner with my arm, wrist, or hand.

I was told that no permit was ever pulled for my address.... :he Several hours later, still waiting on a call-back from the people who installed the tank.

Several phone calls and two days later, the permit seems to be back on track. I will give them until Tuesday to inspect and then I will call and pester again. I can't let another month go by, I need to do some canning SOON!

Just another plug for fermenting and to get all you people who can but don't yet ferment to think about it....I just made almost three more quarts of dill pickles in about five minutes....ok, ten minutes, as I did need to go pick the cukes and the dill. Done. Just need to add the grape leaf, as I forgot again to pick one before it got dark.

I have some horseradish planted this year, so I think I'll try a horseradish leaf on top of the next batch for a spicy dill.

Tomatoes and hot peppers are coming along, so soon it will be time to ferment some salsa....gotta time it right and get some beans fermented to go with that salsa. This is prime bean blob season....I think I'll ferment the beans in the cellar this time....

Ahhh.... I was just thinking about your explandimg black beans today. Can't wait to have a kitchen again.

To spice up my pickels, I use sambal ( Asian style chile paste) super yummy!

Whew talking about nerds, I've always been a nutrition nerd, so I just read your journal every spare chance I got this week! I made salsa last night, all was well until I added homegrown-in-Miracle-Gro tomatoes from in laws ;/ Now I don't want to eat it when my heirlooms are staring at me.

How do you deal with not always being able to eat organic/heirloom? I mean getting past mental blocks...

I have a twinge of disappointment, tell myself I am doing myself and my family so much good with all the things I CAN do, and put it in my mouth!

In Nourishing Traditions there is a story about an experiment that Dr. Price did with a group of underprivileged children. They were fed one nutrient-dense meal a day at school, a lunch of soup made with bone broth, meat, veggies, and a roll made with whole wheat ground in the school's kitchen. They also got raw whole milk daily, butter from pastured cows, and a weekly (I think) meal of organ meats.

Their grades shot up.

At home they got white flour garbage, the current typical American diet.

I figure I am doing so much more than that. When I first started on this path, I was pretty devastated by what I was learning and felt very betrayed. Now I've taken control where I can and really enjoy every minute of it. That really helps.

I was thinking of throwing a hot pepper into one jar and seeing how they came out!

:drool I'm picking up a bucket of pickling cukes from a friend later today or tomorrow. mmmmmmmmmmmmmmmm
