Food Guru
We got the pigs yesterday in the pouring rain! I have a bad cold and no voice left, so the phone calls involved were a bit challenging. We decided to try more modern breeds of pigs (I forgot to ask what they are, but they are standard modern pigs raised on grain and veg waste from a large veg farm that has a busy farmstand and sells to a local grocery store so they can have big signs saying "local produce") rather than the heritage mix pigs we got last year. It will be part of the experiment to see how big and fat they get, being raised on pasture and mostly with scrounged foods.
My dad and mom wanted to get one for themselves and we wanted more pork and bacon and some sausage so we got two for ourselves. We made a deal with the guys who slaughtered for us last time....we got a fourth piglet that we will raise in exchange for killing the other three. So I feel secure knowing that that expense is already covered well in advance. I also promised to stay in the kitchen, barefoot, and cook a fantastic meal from farm products on that day. These guys are really into do-it-yourself and I get an occasional email asking what I am doing lately, foodwise.
Here they are in their house this morning, terrified of me and holding very still, hoping I don't see them:
