Freezing Cheese

Decided its going to be more economical to buy the raw farm cheese in slightly larger blocks, and since it takes the two of us a while to eat a block, I need to freeze it so we don't waste it.
What is the best method freezing cheese so that it doesn't get frosty? I was considering wrapping in seran and then foil over it (and labeling it so it doesn't become cheese surprise!)

Suggestions? Ideas?

can't help on a better way.

every time I freeze cheese it gets that 'texture' I don't like.

definitely ok for melting in a dish kinda thing but for just eating the freezer seems to ruin it for me.


we go thru cheese like crazy. I just freezer bag after shredding the big blocks. use it all the time before I have to worry about frosty or anything :)

I don't like what the freezer does to cheese, so I tried sealing it in cheese wax (epic fail) and have recently canned it, to see if I like it better that way.

Canning is out of my league at the moment, but on the todo list. What does canning to do raw cheese anyway??
If the texture isn't bad for using the cheese in cooking, then I think we'll do it anyway... I guess we'll just give it a go and see what happens!

I hate the texture of frozen cheese. i'm gonna get brave and can mine too...eventually :p

I freeze cheese that I use to cook with. I have been told by friends that if you "seal a meal" small quantities and refrigerate it stays fresher longer? I do find that raw cheese molds quicker so not sure if that would work. Maybe freeze the small packages???

Airproof packing, no air inside, and place in back of freezer to prevent freezer burn. Remember that plastic isn necessarily airproof, especially thin plastic.
