I am watching some show on fried foods, and it reminds me....I have a ton of green tomatoes growing and the local peaches will be coming in soon.

I have jars of lard to use up before December, when I hope to make super-duper lard from our pigs. Meanwhile.....

I had fried green tomatoes and fried peaches when in OKC the past few years at stands at the big horse show. They were obviously from packages of pre-frozen versions, but the promise of something truly marvelous was lurking in there, somewhere. I simply MUST have a recipe and complete instructions for the perfect versions!

C'mon, fess up.....who makes these? I may be the Chief of the Food Police, but I totally approve of foods fried in lard! :D In moderation, whatever that means!

um.. so tonite i picked a tomato for the express purpose of frying it in lard. along with zucchini slices. in lard. with a lot of salt. and perhaps some bottled ranch dressing.

the grease headache will happen later.

fried peaches? heck honey just cut them in half and put them in the grill. thems good eatin' (provided, however, you have ice cream as well).

Hey, I'm a yank, I have no clue and need more DETAILS! Like batter recipes and instructions! I know for you Southerners frying is like breathing, but for me....I was brought up that frying is evil and a rare, rare treat to be experienced after dark when no one is looking!

For fried green 'maters, we just toss some olive oil in a skillet on medium heat, the dip the tomato slices(about 1/2 inch thick) in milk, then flour, then eggs, then bread crumbs. About 4-6 minutes per side or until brown. Add more olive oil as needed while your fry'n. Eat until you can't eat no mo'!!

PS.....this recipe also works equally well for cukes or egg plant. :drool

I basically make an egg tempura type of batter. Of course tempura is NOT what Grandma Nettie called it.

Since I am Gluten Free I use lots of good homestead eggs and mainly cornmeal with a touch of rice flour in my batter. Fry in ... what else ... bacon grease!! Lots of black pepper and some salt. You can do green tomatoes, zucchini, green beans, cucumbers, and yes ... even cauliflower the same way. I like to dip in a good ranch dressing like Ken's Steakhouse. :drool

Cukes, zukes, eggplant and we have even tried some varieties of squash cooked this way.
