I have the rest of the fat rendering. Yay for more cracklings, lol. Oh and yay for the lard too. When I get it all done I'll can it. Might leave that job for Tuesday.

Can you please tell me how you can your lard? I rendered lard today and got 4 quart jars. I water bathed them to get a seal. I couldn't find anything on canning lard, had the 3 grandbabies here, so was a little crazy. probably could have come up with something if I had done a more extensive search. So I searched SS and found the above quote. So why not ask you? LOL

I rendered 2 packages and got 4 quarts. I have 4 more packages in the freezer. Trying to get stuff out of the freezer, Wilbur the 500 pound hog goes to slaughter Wednesday morning. I also been canning broth from the bags of chicken feet I had in the freezer, got 21 quarts so far, 2 more bags to go. Gonna teach a friend how to can broth from chicken feet, so one bag is hers.

That's awesome! I love the stuff, but don't use it very often because we don't fry much. However, before I got on this diet kick I fried some potatoes in it. Had some that needed to be used up so what's a gal to do? Fried potatoes and onions in lard is just about some of the most deliciousness I've ever had!

Speaking of pig...I actually got one of the boars penned up today! He just happened to be up close to the gate so I opened it and started calling "here pig, pig pig" and the dummy walked right on in. Got some feed and led him into the garden area fairly easily. He's not happy about being in there alone so I really need to work on getting the other one in tomorrow. AND, I need to get in the garden and take down the strings I had up to support the peas or there could be a wreck if he gets tangled up in 'em.... hope he just sleeps tonight, lol! While I'm at it I should put the three male weanling pigsters in another pen. Then that leaves Big Daddy. I'll have to run some more electric somewhere to keep him contained. Yay for more fencing projects.

@baymule You're gonna miss Wilbur when he's gone, lol. Oh wait - he'll be baaaack!

It's been a good day already! I go the second boar moved into the pen. Surprisingly easy - again. I saw him up by the gate sniffing around so I just walked out with a can of corn and he followed me right to the pen. He was easier than his brother. Crazy stuff!

So, because I was on a roll I decided to move the little nigi buckling into a pen with Conan and Felix cuz he's just getting too big and too well equipped to be hanging out with his mom and 1/2 sister. He's a wild child, but I grabbed him while his head was in the feeder and he's now a not so happy guy. Not sure if I'll wether him and sell him or wether him and eat him. Lately every time I have someone come to buy goats they get my wethers before I get 'em in the freezer. I gotta stop doing that!

DH is going to work today...ugh. I'm going to my son's to watch the game. D-I-L had surgery on her arm a couple days ago. She broke that arm last year on Thanksgiving and it's still getting it's revenge. She had a cyst form inside her arm near the bone that had to be surgically removed. Couldn't even see it from the outside but it was causing her a lot of pain.

I've got a turkey in the oven cuz I need to get my freezer cleaned out in hopes of filling it with pork later this year. I'll probably take 1/2 of it to DS's for lunch. The other half with be lunch for me and DH for at least a couple days this week. Not sure about sides but I've got a head of cabbage I need to use up. Guess I need to go see what I've got that can be turned into the rest of this meal.

I don't watch football, so not an issue. Stopped liking football when I graduated from high school -- never understood the game but, the crowd was fun.
