Pat, you're welcome. I have always loved ginger ale - its about the only soft drink I like, even as a child - and some time in GB introduced me to ginger beer, which is even better! I make mine with fresh ginger, and it tastes quite good. It gets a lot of fizz though, so I use plastic bottles rather than glass.

I discovered Blenheim's ( www.blenheimgingerale.com ) when I was in grad school and it kind of spoiled me for any other ginger ale or ginger beer!

I am hoping that with your recipe I can make some semblance of their "hot" version... or at least something better than, like, Canada Dry :p

The fact that the woman who writes that blog is Australian makes me think that she knows about ginger beer.
