Gluten/Dairy free potluck dish suggestion needed

Hi all, I've only begun to think about this, haven't looked in a single book or searched yet but I thought I'd throw it out to you.
We need to bring a main dish to the Cub Scout Blue and Gold Banquet Monday night. I want to bring something DS can eat which means gluten and dairy free. It needs to be something I can either have cooking in my crockpot all day or make in less than an hour and a half. Or make on Sunday. Thanks!!:D

Hmmmm, main dish. How about some boneless chicken breast, baked slowly with cooked tomatoes, basil, thyme, and garlic? You can even dice the chicken, to make it go further. Im not familiar with gluten free...so is rice OK? Maybe add some rice?

Black bean soup doesn't really count as a main dish, but it's always a crowd favorite. Spicy, if it's my crowd. :) I have a recipe if you'd like it, although it might be this evening before I could get it posted.

A friend has the same problem with wheat and dairy. She brings a homemade potato salad, baked chicken and fresh fruit to all functions. She has soy issues, as well, so she makes her own mayo.

Expecting more than 200 people so I've got to stretch it some. We were asked not bring soup or anything requiring bowls. I'm thinking I've got a huge CSA chicken in my freezer that was a bonus because the farm had more than they expected so they shared with costumers. If I roast that Sunday I can do a sort of Chicken Tetrazzini kind of thing with GF noodles, lots of veggies and no dairy. I'm going to do GF cupcakes too since the only dessert will be a huge sheet cake.
My fall back option is a ham....

Wow, that site has tons of stuff! I'm sure I'll find something easy and tasty .
I made tacos tonight. DS was thrilled that he could eat them and of course I seasoned the meat myself so it didn't have all the additives in the tacos he had been getting at school. "Mom, these are sooooo good!" :cool:
