Gluten Free shortbread cookies

1 lb butter (NO substitutes) - softened
1 c. icing sugar
3/4 c. cornstarch
4 c. flour
Pinch salt

Mix everything together until it forms a dough. Roll out to 1/4 inch thick. Cut out with cookie cutters. Bake @ 350 F until just lightly browned.

They are light and crispy, perfect for decorating for the holidays and easy for children to help with too. NO CHILLING NEEDED!!!

this recipe was recommended, although I havent' tried them yet, meybe tomorrow. Jsut thought I would share, incase anyone else wants to try these. I'll post back to see if I like them.

Hey, MTN--What cup of flour is this supposed to use? I have celiacs in my family and would love to try this :)

We get our AP flour at the bulk food store, it is a mix. I'll go see if I have a tag. .....

got it. garbanzo bean flour, potato starch, tapioca flour, white sorghum flour, fava bean flour. The tag also says add a 1/4 tsp of xanthum gum/per cup of flour. the girl I got the recipe from didn't mention using xanthum gum, I will ask her. Or I will just try them tomorrow, and let you know.
