Goat's milk mozzarella-YUM!!!

This has been on my "to do" list for so long! I just decided to master soap first. One thing at a time. I have reached the point in my soaping, though, that I am thinking of trading soap lessons for cheese lessons with a co-worker who started making cheese about the time I started making soap. :D She has now branched out from mozz to some kind of culture cheese (did she say cheddar? how hard it that?).

Ooooo! I casually mentioned it last night. I got a completely neutral reply. Can't interpret where he stands. May need to visit some babies soon. Found some on BYH that is nearby and has goats too. I should at least ask.......
He knows I'm feeling better with the diet changes. If I step up and do more animal care maybe he'll realize I'm up to the challenge. Besides, if we get a doeling to start I will be used to caring for goats before I start milking....
As for goat's milk cheese I'll just buy some to start and then see if I can find goats' milk that's not ultrapasteurized to at least try some.
We won't get into the fact that at my appt. yesterday with my naturopath she said she wants me to do a dairyfree trial of 2 weeks to see if it affects the itchy skin I've been dealing with... :rolleyes: grrrrrrrrrrrrrrr

Does your ND acknowledge raw milk? Some do, some don't. As you know, I can't handle even a teaspoon of commercial dairy foods, but guzzle the raw goat's milk. I haven't had the opportunity to try raw cow's milk, as I cannot find any in my area that is pastured. I have no interest in milk from cows confined to a barn 24/7. I am drinking Lactaid now, and it is AWFUL, but I love my hot chocolate!

I should have asked but didn't think to. I'm pretty sure she'd say to go ahead and do two weeks strictly dairy free. I'm being really stubborn, mostly because I DON'T want to!! I love my dairy. But I also know that this intermittent rash is not the contact dermititis my MD has always claimed it is. So I suppose I'll have to just do it. After vacation. I'm going to enjoy my homemade bleu cheese dressing and my mozzarella and my raw milk and my yogurt and creme fraiche. Not all at once!

:D Yeah, how weird. I'll stop eating dairy and be hoping the rash doesn't go away!! :/
This summer I think I am going to try DS on some raw milk to see what happens.

Now what is I can do with all this whey????

How did it come out? I can't get mozzarella right....it rarely stretches for me. I will eventually try the method in my new book and see if that works any differently for me. Not getting enough milk to work with yet, with Plummy drinking so much of it! Me, too, and my folks and dh!

It's good, harder than "fresh" mozzarella from the deli. More like the kind you grate for pizza, etc. In fact I'm cheating on the low carb diet. I have some left over GF/DF pizzas that DS can't eat now that we know of all his allergies. So I am baking them with the fake cheese all picked off and some of my cheese in its place!
It stretched pretty well once I got it hot enough. It is a little grainy but definitely edible.
The ricotta didn't work. I didn't get any curds to speak of. Oh well, my kit makes ricotta too so next time I will try that!

I have not had pizza in months. It was sooooooo good and having my own cheese on top...... :drool
I will have to make sure to find other recipes to melt the stuff on top of!
