Have you checked it out from the library yet? If you can, do so. If they don't have it, find out who orders books, and talk to that person face-to-face. Without patrons, there will be no libraries!

Once you have it in hand, you will see that it is one book worthy of the full cover price. I have gotten my money's worth many times over in the money I've saved by making so many things from this book, most of them amazingly simple and cheap, like the fermented veggies.

OK, I'm off to get my copy to find the recipe for fermented grape leaves, since I just picked a bunch when walking the dog!

All right Free, "fermented grape leaves", I've never heard of that one. Please share. I live in California, I have lots of grape leaves, and if I didn't have enough in my yard, I know where to find some :lol:

You guys got me curious. I have never heard of the "Sally F." book. I'll be off to the library myself now.
BTW anyone into self sufficient living, should read Helen and Scott Nearing's books. They did it way back in the 40's. They kind of started the "back to the land movement". Their books are a wonderfull read. The title of one of them is: "Living the good life". It is about their experience of moving from the big city to the backwoods of Vermont.

FarmerDenise, the book I want is called Nourishing Traditions by Sally Fallon. Apparently all the cool people have it! ;) Ha ha ha!

If you can ferment grape leaves, why not pickels? I'm still waiting for that recipe!! Hint hint. :D

Pick a bunch of grape leaves, remove the stems. Maybe 2-3 dozen or so. Put in a bowl or stock pot with two cups water, 1 T sea salt, and 4 T whey.....(the good kind, live culture, fresh, from mesophilic cheesemaking, draining yogurt, or draining kefir.) Let soak for an hour at room temp.

Roll the leaves up and put into a quart jar, pour the liquid over them. Make up more liquid to cover the leaves, leave an inch of head space.

Leave at room temp out of sunlight for three days, then store in the fridge or at a similar, steady, cool temp. Will keep indefinitely. Use to make dolmas.


I needed to use three recipes worth of the liquid to cover my harvest of leaves, and I used the pot because the bottom is flat and I could cover the leaves with the liquid more easily. I put a clean heavy mug on them to keep them submerged until they go into a jar......right now.....I suspect 2-3 jars, though!

This is a perfect use for the old glass-top canning jars. So pretty in the fridge.

Yes, BBH, you can lacto-ferment just about anything. I haven't done cukes yet, gotta go read up on that! We'll have to start a thread on nt cooking once you have the book! And get more people to get the book so we can make up recipes and share them.....
