Hot oil is critical for good fried chicken. So best if chicken isn't cold from frig as it cools oil too fast as added to pan. @CrealCritter this may be your issue if using a skillet.
You also want to make sure the chicken is patted dry before you put the breading on. Otherwise, the water turns to steam and everything cools off and gets soggy.
Most commercial meat has was water added... you pay by the pound, after all. Adding water is an easy way to get more money for your product.
