If you do not want to use them right now, just chuck 'em in the freezer, whole, peel and all, no need for a bag or anything. When you want one or more, run hot water over it and quite soon it'll peel easily.

Frozen bananas are great for smoothies -- put one or two in a blender with a little milk or yogurt and whatever other flavorings you like, and whirr it around a little. I like key lime juice and oatmeal in mine, go ahead and laugh, but many many other flavorings are possible too.

Of course you can use them in baking too, after thawing :)

My entire life, practically EVERYBODY I have spoken to, says that your bananas are best to use after they've turned BLACK!! (The freezer thing is little bit more appealing, however.)

I just bought a whole bunch of bananas at reduced price, cuz they were brown. In the freezer they go. They won't last long, banana bread and smoothies use them up pretty quickly.

The frozen banana thing reminds me of what I do with lemons and oranges. Just throw them whole into the freezer. I can then take them out at any point all year, pop them in the microwave for a minute, then squeeze for fresh tasting juice. No preparing.
I would think that anything with a peel would work for this.

I don't do this with oranges so much as they don't seem to be really good anymore although pretty pricey.

I do that with lemons and limes and the occasional orange...great for cooking with.

I made some delicious banana butter with some that I had left over and it was so good. It tasted like banana split! I am not sure where I got the recipe but if interested do a search. I think it called for 10 ripe banana's just starting to turn to overipe. I canned 9 half pints of this and it makes great ice cream topping.

This is the recipe I have:

Banana Butter
In a large kettle, combine:
1/2 cup Lemon Juice
3 cups Sugar
1 tsp Butter
1/2 cup finely chopped Maraschino Cherries
3 1/2 lbs (about 10 med.) ripe Bananas mashed

1 Mix well. Bring to a hard rolling boil. Stir constantly. Reduce heat simmering gently uncovered for 20 minutes, stirring constantly.

2 Ladle into hot half-pint jars, leaving 1/8-inch head space. Process in a water bath for 10 minutes.
