Actually dry mustard powder compliments green beans very nicely. Try it sometime! :)

We cook our green beans in water, drain, add crisp bacon to the individual plate, as well as thinly sliced red onion and thickly sliced cold tomatoes. Cut them all up with your knife and fork so the hot and cold and crunch mix together. Lots of black pepper !

I'm glad you posted this, it reminded me of something my Penna. Dutch mother used to make a lot when I was a kid but it's sort of fallen off my radar and I havent' made or had it for YEARS.... til dinner today ;)

Fairly similar to yours, except I just used a dab of bacon grease (plus some olive oil, I'm sure my ancestors would not approve :p) to fry up onions and raw fresh greanbeans til they are all nicely browned, then toss in some cut up leftover ham and a 1/2 cup or so of hot water and simmer til the beans are done, then turn up the heat to mostly evaporate the water.

Happy, and going to HAVE to remember to make this more often, especially once we are picking our own beans,

Pat
