Baymule, I think you're right, it's a difference in variety.

I asked DH (who does crop adjusting) and called a farmer - got the same answer from both:
Around here, oats are usually ready to harvest right after the wheat is ready. Most years that would be early to mid June.

But we're in Kansas. You have a great stand of oats, maybe it's just a bit too early for your variety.
