Funny post! I started skimming the link and saw the word "bacon" but was disappointed it's not actually in the recipe. ;) But it COULD be.

:lol: I'm making them this weekend, I have to get new avocado & some eggs. Man I cannot WAIT til my girls start laying.

This sounds delicious! As it happens I have a couple of avocados in the fruit basket, so I hard cooked some eggs to try the recipe. But the eggs are too fresh, and wouldn't peel neatly. I shall have to see if I can't put together an egg salad with the same ingredients. Might be nice, might just be a nasty, mushy mess.

Why can't I have nice, neat hard cooked eggs? Oh, right, I have chickens! Really fresh and tasty ... or neatly peeled :hu? I guess I'll have to settle for really fresh and tasty :drool :lol:

There is a thread on BYC about hard boiling eggs that are fresh.
Here is how.

Use room temperature eggs. Boil water. Plunge the eggs in the hard boiling water (use slotted spoon or metal colander). Boil as usual. When done, drain and immediately plunge them into ice water. Keep water icy until completely cold. They should peel great. For extra insurance, let your eggs sit out on the counter a day or two.
Works great for me and real fresh eggs hard boiled taste better too.

The method savingdogs uses works really well for me too. I also find that if I peel them under the surface of the cold water, I get nice perfect eggs. Not to mention, its really nice to have your hands in cold water on a hot day :)

I think they sound a little weird too.....the cold rubbery texture of the egg, with the cold slippery fatty guac.....I dunno.

I am waiting to see if Noobie likes them...then maybe.

"Hot day" ??? Whats that? Oh yeah, I vaguely remember that we had some of those last year. This year we are still waiting :(

Glad I wasn't alone in this! They were... interesting. I couldn't get my head around the texture of a deviled egg with the taste of guacamole. DH loved them, so at the very least I've got a healthy snack for him :p
I ended up licking off the guac & giving the egg to the cats :hide

The yolk was very good in the guac tho! Mmmmm fats
