I took an chemical engineering course from a world-renown polymer scientist who said in the first 10 minutes of the first class that you didn't need to know everything, you just needed to be able to look it up. (this was before the internet!).

The filename on picture was all I needed to start looking.

Sweet cream!
And very smooth.
Beyond that, its hard to describe.

I plan to make LOTS this summer, when the cream is really yellow and the butter is orange
