Hard boiled duck eggs

I hard boil mine the same time as large chicken eggs. If they are fresh I have trouble peeling them- I will try the vinegar trick and report back! I find them a bit rich for deviled eggs; I like to make egg salad with half chicken and half duck.
Duck eggs make great mustard pickled eggs too- I think these are even better than hard boiled. These are made like the beet pickled eggs without the beets and some mustard seeds and tumeric.

Have fun experimenting with them. We're still waiting on ours to start laying again, darn it.

Once in a while 1 will crack but it is usually from the same chicken. I think her egg shells aren't quite as thick as the others. It doesn't happen very often though.

Well, while I was planning on devilling the duck eggs, they obviously have other plans. I have been locking them in the barn at night, but for the last two days--no eggs! I will follow them tomorrow morning after I let them out to see what's up and what they are doing with MY eggs. I will let them hatch come, but nights are still cold here, I think they might freeze before they get around to setting on them.
