Have you ever had a buffalo processed?

In October we are going to have the chance to get a buffalo cow. They will process it but I am sure I will have to tell them what cuts I want. Do I say just process like a beef cow or are there some cuts I should stay away from? I told my husband we want the tongue and liver and he made a face. Not sure if I should get the heart and kidneys. I guess I could get those and do something with them. those are not two organ meats that I really care for.

How different is it to cook buffalo? More like deer to get it tender? My sister told me from her past experiences stay away from the steaks they are tough but I would think there has to be some way to cook them so they would be tender.

Get the heart. Heart tastes like a mild beef and it can be stuffed. Yum!!

Also get the fat if you can. You can render that in to lard.

I had some buffalo steaks recently (split an order with a girlfriend). They were quite tender when I cooked them using the Alton Brown method (pan sear and finish in the oven). We also have quite a bit of ground buffalo. Hard to go wrong with that.

Yes, get all the fat and bones....so much nutrition in grass-fed buffalo!!! The rendered fat will be tallow....not lard, that is pig fat. But wonderful to use in cooking. If you have too much, you can make suet cakes for winter bird feeding or make soap with it. Oh, the broth you will make from those bones!!!! Yummmm......

We eat a lot of ground buffalo, as it is available at our local grocery store. We love the taste. It seems a little softer than beef in some ways, if I use it in a recipe rather than as a burger, but that is ok with me, as the nutrient content is so much higher than CAFO beef and it is cruelty-free, as buffalo can't be CAFO'd.

Let us know how it is!

eta: If you have a dog or a cat or chickens, get all the organ meats even if you are not interested in them. Have them ground up and you can use them in your pet foods. The heart is especially high in CoEnzyme Q10, critical for heart function. The organ meats of grass-fed animals is extremely valuable nutrient-wise.

Thank you both for your replies. I figured I would get good advice here. My husband is going to TN from NC to hunt so I will really load him up with the coolers.

i love broth so I will try to get him to bring back the bones. Plus we do have 3 large dogs who will love anything that comes their way.

The steaks sound wonderful. I wish we were getting it now instead of October. It would go great with all the fresh veggies. But there is always next year.

freemotion do you have to add anything to the burger to shape it into patties?

Nope, it's not that soft. We love the "meaty" taste of it, now CAFO burgers taste awful to us....so bland and icky.

Doh! You are right. I always get the terms mixed up. It's fat, it's healthy, it's delicious...call it whatever you want! LOL

I am excited last time he brought back wild boar which upset my stomach every time I ate it.
