How many times is food scraped out into a garbage disposal to be washed down the drain just because it was not appealing in some way? What a waste.
I think you hit the nail on the head. I haven't mentioned this elsewhere but I think I'm also suffering because 20 lbs of the sausage that we spent hours mixing, hand grinding, hand stuffing, etc. went to waste. Our neighbor offered to smoke it for us, which he has smoked lots of things for us and it's turned out great. Well, gave him the times, temps etc and I think he took a nap and forgot to get it out. Not only was it smoked, it was charred and ruined... I'm still working on forgiving him ;) So I just didn't want more waste and disaster and something that ended up too tough or dry, etc...

This is the very best chicken recipe I have ever tried, bar none. I now do TWO at a time, because everyone wants some--and they don't even live here ! Sometimes I brine the chicken to make it juicier and flavorful all the way to the bone, but home grown chickens probably wouldn't need it. It turns out similar to, but better than, the rotisserie chickens at the supermarket.

OMG! LDYchef2k, that chicken looks so good! I am definately gonna try this recipe. I have some little cornish hens in the freezer that is just begging me to fix and I think this will be the recipe I'll use. Thanks for posting it!:celebrate
