Help me so my hash browns aren't mooshie-I fixed them!

I looooove hash browns, but potatoes are a no no for me. So I was thinking a healthier alternative would be sweet potato hash browns. I make sweet potato oven fries occasionally and they rock.
I grated the sweet potatoes, squeezed them hard in a paper towel to dry them, and fried them in a pan with butter. I also added a tad of cinnamon and seasoned salt.
They browned a little bit, but they were pretty mooshy. I served them with a dollop of sour cream. J ate every bite of his and went back to scrape the pan, so the taste is fine :gig
However, I want texture goodness as well. I'd like them to come out in crispy little individual cakes, like potato latkes.
I was thinking about mixing in an egg white next time, and perhaps frying them in bacon fat instead of butter, so I can get the pan hotter.

Whatcha think?

This is the way I made hash browns sweet or regular: Bake the potatoes the night before until they are al dente, then refrigerate them. Next day grate them when the are cold.

Fry them in a nice cast iron skillet in bacon grease (or whatever you want). If you cook them the night before, they dry out so they will be crispy (yet tender inside) the next day when you pan fry them.

(I'm not a chef, I just play one on T.V. :p)

I place my shredded potatoes through a ricer to extract the excess water. Then they fry firm and crisp.

I wash/soak the shredded potatoes in water. Then drain and squeeze the potatoes. Save the potato "flour" in the bottom of the wash/soak water, add it back into the potatoes along with a egg or two..

Yum potato pancakes with fresh homemade applesauce with some cranberries fresh out of the bog.. Ah yes don't forget the dollop of yogurt on top!

I think so! Potato Rosti's are Swiss...Everyone always makes a beeline for the Rosti booth at the Royal Winter Fair here.. tastey om nom and they're usually topped with peameal bacon cheese and/or sour cream

I made them again and this time they're OM NOM NOM!

-One grated sweet potato
-two eggs
-two Tbs flour
-tsp cinnamon

Fried them up in bacon grease!
Crispy. Crunchy. Served with a dollop of sour cream.

And I'm in love.
